Cold soup with lovage

I love soups. Especially during the winter time they warm up and provide so many vitamins 👍

What about the summer time.... ? More less the same, just it is nice to cool down. Cold soup is perfect.
The last time I shared the recipe for Gazpacho and today we have another star The Beetroot.

Additional tips:

  • instead of using only Vegan yoghurt (it is a bit more expensive) oat milk can be used in 1:1 proportion 🙂 Yogurt make it more creamy.

  • I always encourage to use Vegan ingredients  to show how easy we can get all without losing anything 💚

Cold soup with lovage

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 300 g of cooked beetroot (2 pcs.)
  • 300 g of ground cucumbers (2 pcs.) or 1 regular one
  • radish (6 pcs.)
  • 250 ml of Vegan yoghurt or oat milk
  • 1 teaspoon of salt
  • 1 tablespoons of apple vinegar
  • 1/2 teaspoon of black pepper
  • fresh lovage (optionally dill)

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Cook beetroots, peel them and shred on a coarse grater. Shred also the fresh cucumbers.

  2. I use S shaped blender to chop radish.

  3. Mix the vegetables with the other ingredients (Vegan yoghurt, salt, pepper, apple vinegar). Use blender just for about 10 seconds to get more smooth texture. Small pieces of vegetables should be still visible in our soup 🙂

  4. Before serving add chopped cucumber and lovage.
