I love soups. Especially during the winter time they warm up and provide so many vitamins 👍
What about the summer time.... ? More less the same, just it is nice to cool down. Cold soup is perfect.
The last time I shared the recipe for Gazpacho and today we have another star The Beetroot.

Cook beetroots, peel them and shred on a coarse grater. Shred also the fresh cucumbers.
I use S shaped blender to chop radish.
Mix the vegetables with the other ingredients (Vegan yoghurt, salt, pepper, apple vinegar). Use blender just for about 10 seconds to get more smooth texture. Small pieces of vegetables should be still visible in our soup 🙂
Before serving add chopped cucumber and lovage.
