Lately, my neighbour who had an excess of zucchini gave me two big cucurbits beauties 🥰
That reminded me about the vegetable stew but this time I added an unusual set of spices 🧙‍♀️

Taste appeared to be essential and very good 😋
Have You known that zucchini is the super food due to high level of antioxidants- we do not peel it, as its skin is the treasury of nutritional values 💚 I also leave the seeds with pulp.

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!

2,3 kg of zucchini
3 pcs. of red pepper
4 pcs. of carrots
2 pcs. of onion
500 ml of tomato juice
100 ml of frying oil
Optionally: 3 teaspoons of capars
Spices:
3 teaspoons of marjoram,
3 spoons of smoked paprika
9 cloves
4 bay leaves
5 grains of allspice (depending on size)
2 teaspoons of cinnamon
1-2 tablespoons of salt and pinch of pepper

Next, follow the steps to finalize your dish and finally be able to enjoy it!

Onion and red pepper cut into cubes, carrots into slices. Preheat oil, add vegetables and the spices (including part of salt). To make the taste essential I grind cloves, bay leaves and grains of allspice (I put them to the cup add a bit of water and blend it). Cover the pot and stew on low heat for 15 minutes.
Cut zucchini lengthwise into 2, then each half once again lengthwise and into cubes. Add into the pot and stir all gently.
Add another portion of salt to tomatoes juice, stir it and add into the pot. Optionally add capers. Increase heat for a while to make it boiling, then stew on low heat for 25 min.
