Beetroots have strong flavour which can be perfectly balanced by delicate taste of lettuce and orange.
It is up to You whether You prepare it for a quick lunch or a fancy dinner- then You can prepare a'la carpaccio.
Serving this salad with piece with crusty bread makes it perfect.

It is better to cook the beetroots the day before. Depending on the size it takes about 1 hour to cook them.
I always cook a big pot of beetroots as my dogs 🐶🐶 also like them. They get them blended.

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 1 large beetroot (460 g) or 2 smaller ones
  • 1 orange
  • lamb's lettuce (somtimes called Corn Salad) 60g
  • pinch of salt
  • 1 teaspoon of oregano
  • 3 tablespoons of roasted sunflower seeds
  • dressing:
  • 4 tablespoons of soy sauce
  • 2 teaspoons oil (rapeseed, sunflower or linseed)

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Cook in advance, the beetroots in peel. Depending on the size , cooking takes about 1h. Optionally: if You have enough time leave them in water till it cools down. It is very easy to peel the cooked beetroots.

  2. Place the lamb's lettuce on the plate. Then depending on the version (quick salad or carpaccio) cut the beetroots and orange into cubes or slices. Quick salad: in the bowl mix beets, orange, pinch of salt, oregano, soy sauce and oil. Then place the salad on lettuce. Carpaccio: put the slices of beetroot on lettuce, sprinkle with salt, then place 1/2 slice of orange between the beets. Sprinkle with oregano. Mix soy sauce and oil and pour the dressing over salad.

  3. Add the roasted sunflower seeds on the top (to roast the sunflower seeds place them on the frying pan and keep on the middle heat for about 2-4 minutes - stir it to make sure it doesn't burn).

  4. Serve with a piece with crusty bread. Enjoy !
