I share with You another recipeΒ  for Gingerbread cookies.
It is similar to the previous one, but one of the main ingredients was replaced with wholemeal flour.

I also used different type of sugar. There are many opinions about different kinds of sugar. In general sugar is sugar, butΒ  some research confirm that coconut sugar is healthier and better than the regular type.

Taste is a bit different so it is worth to try- one remains the same it is yummy and nutritiousπŸ₯°

Gingerbread  wholemeal cookies

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 150g of chickpea flour + about 4 tablespoons when kneading the dough
  • 200g of wholemeal flour
  • 100g of sugar (I used coconut sugar)
  • 100ml of oat milk
  • 75ml of oil
  • 1 1/2 teaspoons of cocoa
  • 2 Β½ teaspoons of gingerbread spice ( I use ready mixture which includes cinnamon, cloves, cocoa, coriander, allspice, nutmeg)
  • 1 teaspoon of baking powder
  • 3/4 teaspoon of baking soda

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. In general sugar should have more less the structure of icing sugar. Coconut sugar is quite fine, so there is no need to use the blender. If You use regular sugar use S-shape blender.

  2. Put all the dry ingredients into the bowl and stir it. Then add oat milk and oil. At the beginning stir it using the spoon, later use hands to knead the dough.

  3. Sprinkle the table (or silicone mat) with flour. Select 1/3 of the dough. Sprinkle the top side with flour and roll out the dough. Use templates to cut out shapes.

  4. Preheat the oven to 180 degrees. Use the baking paper and bake the cookies for 9-13 minutes. While baking the first time check the time suitable for Your cookies. It depends on the oven and dough thickness.

  5. You can decorate Your cookies just make sure what You use. Food pens for baking, often contain dyes from ground insects πŸ¦—πŸ¦—πŸ¦— It's sad and unnecessary.

  6. When the cookies cool down they will be very crunchy. Enjoy and .......don't eat all at once πŸ˜‰
