First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!

1 large or 2 small eggplants (0.5 kg)
4 tablespoons of olive oil
3 tablespoons of lemon juice
3 tablespoons of chopped parsley
2 tablespoons of chopped dill
1 large garlic clove (very finely chopped)
¼ small onion (very finely chopped)
salt

Next, follow the steps to finalize your dish and finally be able to enjoy it!

Preheat the oven to 200 degrees. Wrap the eggplant in aluminium foil, prick two or three times with a fork and put in the oven, bake for 25 - 30 minutes. I don't have the oven , just the electric pot. In this case I cut off the cap, cut the eggplant into 8 pcs. sprinkle with salt and add 4 tablespoon of my favourite oil. I bake it for about 30 min. in 180 degrees.
Unwrap the eggplant from the foil, cut off the cap and finely chop the eggplant into cubes. Transfer to a bowl, mix thoroughly with the rest of the ingredients and refrigerate for at least two hours. It tastes the best the next day, served with crispy bread.
