It's the season for asparagus and You can often buy them in a good price.
This is a tasty and easy recipe.

Tips:
- in original recipe it is baked in the oven. I use electric baking pot,
- it is always recomended to cut off 2-3 cm of the asparagus' bottom side as it can be woody.
Well, I do it but always cook it,  just don't serve it to the guests ☺️
- I used regular mustard but added a teaspoon of mustard seeds;

Baked white asparagus with potatoes

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 3-4 potatoes
  • 1 teaspoon of oil
  • pinch of salt
  • 1 bunch of white asparagus
  • 1/2 - 1 teaspoon of oil
  • pinch of salt
  • Dressing:
  • 4 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon French mustard
  • 1/4 teaspoon agave syrup or other sweetener
  • salt and black pepper
  • to serve: fresh dill

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Preheat the oven to 200 degrees. Meanwhile, peel the potatoes and cut into eighths. Trim the woody ends off the asparagus and cut into pieces about 4-5 cm long.

  2. Put the potatoes in a bowl, add oil, salt and rub them thoroughly. Pour onto a baking sheet lined with baking paper and bake for 10-12 minutes. In the meantime, put the asparagus in the same bowl and rub it with oil and salt as well. When the potatoes become brown, add the asparagus, mix thoroughly and bake for another 10 minutes.

  3. While the asparagus is baking, chop the dill and mix all the dressing ingredients in a glass. Pour the dressing over the baked asparagus and potatoes, sprinkle with plenty of dill. Enjoy 🙂
